Paleo Tacos with Guacamole

  • 500g beef mince

  • 1 tsp taco seasoning

  • ½ brown onion, diced

  • ½ red onion, diced

  • 3 tbsp olive oil

  • Juice from 1 lime, halved (one for the taco meat and one for the guacamole)

  • 3 cloves garlic, diced, (2 cloves for taco meat, 1 clove for guacamole)

  • ½ jalapeno pepper, diced and split in half for tacos and guacamole

  • 1 head lettuce

  • 1 avocado

  • 1 tomato, diced

  • 2-3 leaves coriander, chopped

  • Salt

  • ½ jar of salsa



  1. Heat the pan.

  2. Place the meat in a bowl and sprinkle seasoning on top.

  3. Pour 2 tbsp olive oil into the hot pan.

  4. Break up seasoned meat into the pan.

  5. Stir the meat frequently. Cook until no pink is visible. Remove from pan once cooked.

  6. Dice your red and brown onion, jalapeno, and garlic. Slice your lime into quarters.

  7. Pour remaining 1 tbsp olive oil into pan.

  8. Put your diced veggies in the pan (brown onion, 2 cloves garlic, and ¼ jalapeno). Cook until the onions are translucent (approx. 3 minutes).

  9. Squeeze half of the lime into your onion mixture.

  10. Add the meat back into the pan and reheat it.

  11. Guacamole: Cut avocado in half and remove the seed.

  12. Spoon the green flesh of the avocado into your bowl.

  13. Mash the avocado with a fork.

  14. Dice your tomato and coriander.

  15. Add tomatoes, coriander, red onion, ¼ jalapeno, 1 clove garlic and salt to the mashed avocado and stir together.

  16. Assemble lettuce tacos by scooping meat into clean lettuce leaves and adding toppings accordingly.
