Chicken Zucchini Alfredo

  • 3 zucchinis, spiralized

  • 2 Tbsp butter

  • 2 Chicken breasts, cut into pieces

  • 1 tsp Salt

  • 1 tsp black pepper

  • 3 cloves of garlic, finely chopped

  • ¾ cup cream

  • 1 cup shredded Parmesan Cheese

  • 2 Tbsp chopped parsley



  1. Microwave the zoodles for 2 minutes.

  2. Melt the butter in a pan over medium heat, cook the chicken, salt, pepper and garlic until chicken is cooked.

  3. Add the cream, cheese, and parsley, stirring until chicken is covered. Bring to a boil then stir until the sauce has reduced to about a half.

  4. Remove from the heat and add the zoodles to mixture. Stir until they are well coated.

  5. Serve with fresh parsley and more parmesan.
